I normally pick a song first, then choose an anime that goes with it. The best thing to do is to keep your options open, don't work yourself into a corner, which is something that i've done alot and its stifled my work as of late.
My only piece of advice is to use the Hellsing Ultimate OVA rather than the original anime series. As for music, there's a wide variety of music that you can use. You can either use stereotypical death metal or you could go for some more operatic pieces I suppose.
