Maybe Samurai Champloo because it hits TV's this summer and who knows how long it will actually rub. Saiyuki is another possability because they're making a movie of it, and there are 12 seasons. I don't maybe I'm wrong.

Though I don't think there is an anime everyone can agree on that "never gets old" I do have a list of personal favorites that I can (and have) rewatched time and time again. Sure, if I were to watch them a whole lot every couple weeks they would definetly get old for me, but as it stands now I have yet to tire of:
Giant Robo: When I'm burnt out on anime I turn to Giant Robo and then I usually get into an anime watching mood afterward. The series reminds me why I started watching anime in the first place.
Gunbuster: Like GR, this is another series that reminds me of the days when I was new to anime. Even though it might be partly nostalgia factor, it is mainly the nice pace of the series and drama that keep me entertained. I still think it is Anno's best work.
Bubblegum Crisis (original): Dark, but also stylish and fun with a nice Blade Runner atmosphere. Definetly a series I can just put in when I'm out of stuff to watch and be content with.
There are a couple more series I haven't tired of yet, but I list these 3 because it has been years since I first saw them so I know they have replay value for me.
ARGGGH! All of you ashame me! No one has even MENTIONED Akira! For shame! *runs around cursing people*
Ahem... anyway... Akira, and pretty much anything Studio Ghibli (and anything Hayao made before that, which covers Nausicaa)
Maybe I'll come up eith a sig soon... until then, be patient.
