I love Yakitate!!Japan opening: Hokigumo. I also like music from Inu Yasha, Fullmetal Alchemist, Yami no Matuei, and Sokyuu no Fafner.

Final Fantasy's "Real Emotion" (not the english version) is nice. And its one of my favourites for now. The others are Ohayiou (HxH) and some of Rurouni Kenshin's.

Witch Hunter Robin, Rurouni Kenshin, and all of the ending themes from Inuyasha. There is this new show on Adult Swim that comes on on Saturdays at 12:00. I forgot the name, but I love the theme song.
