Personally, I love the music from Rurouni Kenshin and Gensomaden Saiyuki. Those two are my favourites. Oh and Onegai Teacher too! :] My current on-going song is "Bomb-A-Head!" [Tenjou Tenge Opening].

The best anime music to me comes form the Inuyasha OST's or the DnAngel OST's.
I'd say Witch Hunter Robin. It's really moody and relaxing, plus its great to listen to while writing or when your up late..
Cowboy Bebop, FLCL, i'm starting to like the opening theme for Stand Alone Complex lately...
My favorite anime OST is the .hack//SIGN OST by Yuki Kajiura. Kajiura is my favorite composer for that matter.
I also really like Gundam opening themes. They are usually pretty good.
