Here is one for ya. Onimusha 3 Nobunaga VS Samanoske the final battle. As it starts Nobunaga transforms into his demon form and you have to tough it out with just your sword. After you pound him into the ground he has yet another transformation. His final form a fire demon(much like the Balrog of LOTR) complete with a blazing red sword. But wait Samanoske goes into his Onimusha mode and then all heck breaks lose. Its a pretty sweet fight to the finish.
