I think it's all a matter of taste...I usually have guys in my avatars and signatures...it's just easier to create a backround for them, more grungy and dark....besides, rather they're male or female...I just pick the characters because I like them.
I'm sure everyone has their avatars for a reason. You shouldn't even have to have a reason!I have Spike on mine for obvious reasons.

I have Charlotte from VHD: Bloodlust. The reason for this is self-explanatory.
I think it's because you can find better female anime than male anime. Oh and they are really hot too.
I use them because they look better and so many anime carricters remind me of me. I prefer using Souske Sagera from Full Metal Panic
