I'm a big fan of metal also, but I there are only a few instrumental bands that I know of and tell tell the truth most aren't really bands, just guitarist who broke off and made a solo album, those are:

Torchs of Fury - Self-titled


but yeah, if you really won't to find some then look for solo guitarist
