i think FLCL has good background songs (the pillows)
it does not think it does not sleep it does not laugh or cry. all it does from dusk till dawn is make the soldiers die

Evangelion, R.O.D. the tv, Spiral, Soul Hunter, FMA, and DNAngel have pretty cool background songs. I kind of like the Cromartie High School background songs too for some reason.
Cowboy Bebop, Samurai Champloo, Naruto and Trigun for me. Maybe not as a whole, but they had some unique songs that I will always remember.
Also, FMA has a great 2nd opening theme song.
.hack sign has the best background songs. But opening and ending songs are .hack dusk.

Well, it was a hard choice I had to make. Escaflowne beat out FLCL and Hellsing. The OST's for Escaflowne rock my socks. Each song portrays the emotion of the anime/movie.
