My favorite opening theme would have to be "Cruel Angel's Thesis" from Evangelion, and my favorite closing theme is "Yasashii Yoake" from .hack//SIGN. "Yasashii Yoake" is just a very well-put-together piece, and "Cruel Angel's Thesis" is catchy as hell. In general, music from any .hack series tends to be great. "Fake Wings" and "The World" were also great works from .hack//SIGN.
Some of my other favorites are "Inner Universe" and "Rise" from Ghost in the Shell: Stand Alone Complex. If I'm not mistaken, they're both opening themes from different seasons of the show.
on this anime called Scrapped Princess the ending song is my favorite. I know the whole song by heart. Even though its in japanese.
