Elfen lied - it is very bloody and very sad, but I like it.
Elfen Lied is without a doubt, one of the most bloodiest animes I've seen. But I believe I have seen worse.
Some parts of Ninja Scroll I saw are a fine example, as is Fist of the North Star.
I thought Akira was bloody as well. The first episode of Gantz was not pleasant in gore details.
Vampire Princess Miyu, episode 1 had its eek bits too.

if it's about the bloodiest anime then i think Hellsing Ultimate(The OVA) would be the one especially the third episode it's filled with violence and a lot more blood
