Berserk it was bloody and had a fight seen every other scene
I would have to say that the bloodest anime I have ever seen was X but that movie was stupid.
Number 2 is tied and would have to be the Runin kensin, cowboy bebop, and trigun (uncut versions)

Well whoever said Gantz i have to go with that. because i mean i thought Bleach and Trinity blood were bloody that anime was Gore to the extreme at least on MANY parts. i mean cutting off limbs blasting heads off O.O its all so much to take in at once not to mention the (adult scenes) glad im 18

You clearly haven't seen the Hellsing OVAs.
I guess mine would be Hellsing....I know it's not that bloody but I don't really like gore and such so I have not seen much in the way of bloody anime
I'd have to say Elfen Lied and the Hellsing series. Elfen Lied takes the top for me though, the blood comes when you're not expecting it at times. Heck, the first ep of Elfen Lied completely took me off guard. Stunning gore. ^^;

You're right there about Elfen Lied. I was like, "Errrgh?" and figured I was in for a second round of Texhnolyze, only gorier and longer. And with more girls. But after having watched a bunch of other bloody shows I suppose it wasn't... that... bad.
